Gazpacho Cooler

  Green pepper 1 Small, cored, seeded, and diced
  Sweet red pepper 1 Small, cored, seeded, and diced
  Cucumber 1⁄2 Medium, peeled, seeded, and diced
  Green onion 1 , including top
  Lemon juice 2 Tablespoon
  Garlic 1 Clove (5 gm)
  Ground red pepper 1⁄8 Teaspoon (Cayenne)
  Low sodium tomato juice 2 1⁄2 Cup (40 tbs)

1 ln a food processor or blender, whirl the sweet green and red peppers, cucumber, green onion, lemon juice, garlic, and, if desired, the ground red pepper for 1 minute or until well combined.
Add the tomato juice and whirl 30 seconds more or until smooth.
