Gazpacho With White Wine
|Tomato||1 Large, chopped|
|Cucumber||1 , sliced and chopped|
|Green pepper||1 , chopped|
|Onion||1 , minced|
|Garlic||1 Clove (5 gm), minced|
|Vege salt||1⁄2 Tablespoon|
|Tomato juice||1 Cup (16 tbs) (Homemade)|
|Olive oil||2 Tablespoon|
|Lemon juice||2 Tablespoon|
|White wine||1⁄2 Cup (8 tbs)|
Peel tomato and cucumber; remove seeds from green pepper.
Chop vegetables, then put into blender with minced onion, garlic, salt, paprika, and tomato juice.
Blend at high speed.
Add oil and lemon.
Chill for two hours.
At serving time, add wine and several ice cubes.
Pour into soup tureen and set on platter where you've arranged bowls of condiments to be used as garnish.
Include among the condiments: chopped green onion, cucumber slices, and chopped tomato.
