Sofrito

Sofrito is a saute of onions, green peppers, tomatoes, garlic and spices, used as the bases of many Spanish dishes.
Ingredients
  Yellow onion 2 Medium, chopped
  Green bell pepper 1 Medium, chopped
  Canned crushed tomatoes/Tomato sauce 15 Ounce (1 Can)
  Dry white cooking wine 1⁄2 Cup (8 tbs)
  Garlic 4 Clove (20 gm), chopped
  Red pepper flakes 1⁄2 Tablespoon
  Olive oil 2 Tablespoon
Directions

Add the onion and green pepper to olive oil in a skillet and cook over low heat, until onions are translucent, but not browned. Add the garlic, tomatoes, cooking wine, pepper flakes, and green olives, cook over medium heat about 10 minutes.

Makes 2 1/2 Cups
