Soffritto

Chef Keith Snow will show how to make safrito in his own way.
Ingredients
  Red pepper 1 Medium, dice
  Green pepper 1 Medium, dice
  Onions 1 Medium, dice
  Oregano 1 Tablespoon
  Cumin 1 Teaspoon
  Navel orange 1 Medium
  Brined hot pepper 1 Tablespoon
  Garlic 1 Clove (5 gm), slice
  Extra virgin olive oil 3 Tablespoon, divided
  Bacon fat 1 Tablespoon
  Kosher salt To Taste
  Pepper To Taste
Directions

MAKING
1. In a heavy duty pan combine extra virgin olive oil with bacon dripping and give it a stir.
2. Add onion, bell pepper and garlic, stir well.
3. Pour some more oil if required and add some salt and pepper.
4. Cook them until the saffrito is soft.
5. Add oregano and cumin before finishing the dish.
6. Squeeze the orange juice in the saffrito.

SERVING
7. Use the saffrito as a base with any meat dishes.
