Ingredients
  Ripe tomatoes 4 Large, peeled and chopped (Very Ripe)
  Cucumber 1 Large, peeled and diced
  Onion 1 Medium, finely minced
  Green pepper 1 , seeded and finely minced
  Tomato juice/Cold water, / regular-strength chicken broth 1 Cup (16 tbs)
  Wine vinegar 1 Tablespoon
  Olive oil 3 Tablespoon
  Garlic clove 1 Small, mashed or minced
  Lettuce leaves 1
  Ice cubes 4
  Salt To Taste
  Pepper To Taste
Directions

Mix the tomatoes, cucumber, onion, green pepper, tomato juice, vinegar, oil, and garlic; add salt and pepper to taste.
Chill soup until icy.
