|Tenderloin steak||5 , cut 1 inch thick|
|Shallots||4 , finely chopped|
|Eggplant||1 Small, peeled and finely diced|
|Sweet green peppers||2 , finely diced|
|Tomatoes/3 large ripe tomatoes in season||1 Can (10 oz), peeled, seeded and mashed|
Oil bottom of baker.
Cover with shallots, eggplant and peppers.
Close and bake 20 minutes.
Remove lid (beware of steam), cover steaks with tomatoes, bake another 10 minutes uncovered.
Sprinkle with chives or parsley before bringing it to the table.
