Peach and Tomato Gazpacho

A delicious and fresh appetizer, which is easy to make an look so colorful.
Ingredients
  Yellow peaches 3
  Tomatoes 2 Large
  Cucumber 1⁄2 , peeled
  Jalapeno 1 , seeded
  Garlic 1 Clove (5 gm)
  Olive oil 2 Tablespoon
  Red wine vinegar 1 Tablespoon
For the topping
  Corn 1⁄2 Cup (8 tbs)
  Red bell pepper 1 , chopped
  Avocado 1⁄2 , cubed
  Fresh cilantro 2 Tablespoon
Directions

MAKING

  1. In a blender, add in all the ingredients and blend until chunky.
  2. Pour the gazpacho in a bowl and top with corn, red pepper, avocado and cilantro.

SERVING

  1. Serve and enjoy.
