Fiesta Potatoes - Cheesy Baked Potatoes

Kid's favorite recipe!
The perfect baked potato is crispy skin on the outside and fluffy on the inside. Top it up with creamy cheese, sour cream and crunchy vegetables!

Ingredients

Baking potato 2 , scrubbed, cubed, soaked in water for 30 minutes
Olive oil 2 Tablespoon
Salt To Taste
Spring onion green 1 Tablespoon , finely chopped
Chopped red bell pepper 1 Tablespoon
Jalapeno slices 2
Cheese sauce 2 Tablespoon
Sour cream 2 Tablespoon

Directions

GETTING READY

1. Preheat oven to 350F.

2. Pat dry the potatoes. Line a baking tray with foil and place the potatoes. 

 

MAKING

3.  Add olive oil and salt, mix well. Spread in a single layer. Bake at 350F for 25 to 30 minutes.

 

SERVING

4. Fill serving bowls with potatoes, top with cheese sauce and sour cream. Garnish with red bell pepper, spring onion and jalapeno slices.
