  Shortcrust pastry 1 Cup (16 tbs)
  Eggs 2 , beaten with yolk
  Egg yolks 1
  White onions 3 Medium
  Butter 30 Gram
  Cream 1⁄2 Cup (8 tbs)
  Milk 1⁄2 Cup (8 tbs)
  Plain flour 1 Teaspoon
  Salt 1⁄2 Teaspoon
  Grated pepper 1 Pinch
  Grated nutmeg 1 Pinch
  Swiss cheese 30 Gram
  Butter 2 Teaspoon

Saute garlic in 3 tablespoons of oil for 2 minutes, discard garlic. Gently cook onions in oil 4 minutes, then add chicken livers and mushrooms, and brown for 5 minutes. Add tomato paste mixed with water, tomatoes and juice, thyme, basil, bay leaf, salt, pepper and sugar. Simmer, covered, 30 minutes. Cook spaghetti in boiling salted water with remaining olive oil. Drain and put on heated platter with half the cheese. Spoon over half the sauce and toss. Pass remaining sauce and cheese separately. Serves 4 to 6.
