Spaghetti and Meatballs

Originally, I was going to suggest making this dinner for Valentines Day. I was going to make heart shaped meatballs. Then I tasted it and it was so yummy and delicious and full of garlic. I love garlic. But, maybe it isnt the best thing for Valentines Day? Unless youre both eating garlic? Maybe? You can make an educated decision on this one. I started shaping the meatballs, but they kinda just looked awkward, and not really like hearts. So they are just round.

Ingredients

Spaghetti 1/2 Pound
Sauce ingredients
Olive oil 1 Tablespoon
Onion 1 ((chopped))
Carrots 2 ((Grated))
Daikon radish 1 Cup (16 tbs) ((Korean Daikon Radish, grated))
Garlic 4 Clove (20 gm) ((minced))
Balsamic vinegar 1 Tablespoon
Kale 1 Cup (16 tbs) ((roughly chopped))
Napa cabbage 2 Cup (32 tbs) ((chopped))
Salt 1/2 Teaspoon
Pepper 1/4 Teaspoon
Dried thyme 1/2 Teaspoon
Dried oregano 1/2 Teaspoon
Dried basil 3/4 Teaspoon
Dried rosemary 1/2 Teaspoon
Dried parsley 1/2 Teaspoon
Cayenne 1 Dash
Tomato sauce 2 Cup (32 tbs)
Pasta water 2 Cup (32 tbs)
Meatballs ingredients
Ground beef 1 Pound
Olive oil 1 Dash ((For greasing))
Sea salt/Garlic smoked sea salt 1/2 Teaspoon
Lemon juice 1 Teaspoon
Pepper 1 Dash
Dijon mustard 1 Teaspoon
Garlic 2 Clove (10 gm) ((minced))
Parmesan 1/2 Cup (8 tbs) ((for topping))
Fresh basil 1/2 Bunch (50 gm) ((for topping))

Directions

To Prepare:

1. Add pasta to salted, boiling water.

2. Cook according to package directions. Reserve 2 C pasta water before draining*.

Making:

1. Heat skillet. Add 1 T olive oil.

2. When it’s hot, add onion, carrot, radish, salt, and pepper. Cook for 10 minutes over medium heat, stirring occasionally.

3. Add garlic and balsamic vinegar, cook 1 minute more.

4. Add kale, cabbage, herbs, cayenne, tomato sauce, and pasta water. Stir, bring to a boil, then reduce to a simmer for 5-10 minutes. Add more water if needed.

5. Combine beef, salt, lemon juice, dijon, garlic, and a drizzle of olive oil.

6. Using hands, mix (but don’t over mix). Divide in 8. Shape each of the 8 pieces into a ball.

7. Heat skillet, add 1 T oil, when hot, add meatballs and flatten ever so slightly. Cook, covered, over medium heat for 5 minutes.

8. Flip and cook, uncovered, for 5-10 minutes more (or until internal temperature of meatball reaches 160F).

Serving:

1. Top pasta with sauce, meatballs, parmesan, and basil.

2. Enjoy!

Note: I paired it with some Caesar Salad.
