Spaghetti With Goat's Cheese

Ingredients
  Garlic 1 Clove (5 gm)
  Anchovy fillets 2
  Olive oil 2 Tablespoon
  Chopped parsley 1 Tablespoon
  Spaghetti 1⁄2 Pound
  Goat cheese 1⁄4 Pound (firm)
  Butter 2 Tablespoon
Directions

GETTING READY
1) Keep in a bowl, peeled and crushed.
2) With a wooden spoon, add the anchovy fillets and pound to a paste.
3) Beat in the oil, parsley and seasoning.
4) Leave to stand for 15 minutes.

MAKING
5) Meanwhile, cook the spaghetti in boiling salted water till tender.
6) Derind the cheese and cut into small cubes.
7) In a colander, drain the spaghetti .
8) In a spaghetti pan, melt the butter and add the cheese.
9) Cook, stirring, over a low heat for 2minutes.
10) Return spaghetti to the pan and toss lightly till coated with butter.
11) Arrange in a warmed serving dish, pour the anchovy dressing over and toss lightly before serving.

SERVING
12) Serve the spaghetti with crusty bread.
