Spaghetti With Spinach And Mushrooms

  Fresh mushrooms 1⁄2 Pound, trimmed and thinly sliced
  Lemon juice 1 Tablespoon (Fresh)
  Corn oil margarine 1 Tablespoon
  Madeira 2 Tablespoon
  Garlic 2 Clove (10 gm), minced
  1% milk 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Frozen chopped spinach 10 Ounce, thawed and drained (1 Package)
  Whole wheat/White spaghetti 1⁄2 Pound
  Parmesan cheese 2 Tablespoon, freshly grated

In a small bowl combine mushrooms and lemon juice.
In a large skillet over low heat melt margarine.
Add Madeira and garlic.
Cook for 3 minutes.
Add mushrooms.
Cook for 5 minutes.
Add milk, salt and pepper.
Bring to a boil over medium heat, stirring constantly.
Drain spinach well.
To the mushroom mixture add spinach.
Simmer for 5 minutes.
Remove from heat; keep warm.
Cook spaghetti al dente using package directions; drain.
In a serving dish combine spinach mixture and hot spaghetti; toss to combine well.
Sprinkle each serving with 1/2 tablespoon Parmesan cheese.
