Buttery Soybean Croquettes

Ingredients
  Cooked soybeans 2 Cup (32 tbs)
  Oil 1 Teaspoon
  Tomato puree 3⁄4 Cup (12 tbs)
  Minced onion 2 Tablespoon
  Salt 1 Teaspoon
  Celery salt To Taste
  Butter 2 Tablespoon
  Flour 3 Tablespoon
Directions

Boil the minced onion and seasoning in the tomato puree.
Make a roux of the flour and butter, add to the tomatoes and cook to thick gravy.
Add soybean pulp.
Shape into croquettes.
Roll in dry bread- crumbs and saute in oil.
These may also be baked.
