Deep Fried Golden Soybeans

Ingredients
  Soybeans 1 1⁄2 Cup (24 tbs) (dried)
  Sugar/Honey 2 Tablespoon
  Water 3 Cup (48 tbs)
  Oil 2 Cup (32 tbs)
  Salt 3⁄4 Teaspoon
Directions

1. Wash soybeans discarding split beans and skin. Dissolve sugar in warm water and soak beans for 3-4 hours to hydrate.
2. Drain beans. Pat dry and spread on paper towels to dry completely. Discard any remaining skins and broken beans.
3. Heat oil in wok over medium-high heat. Deep-fry 1/2 cup soybeans at a time until golden brown and floating freely on top of oil. Drain well and cool.
4. Roast for 15-20 minutes at 325°F (160°C), stirring soybeans occasionally until beans are crunchy and golden brown.
