Moqueca

 

Moqueca is a very popular and traditional seafood soup from Brazil. This seafood stew is typically prepared by using any seafood like fish along with onions, garlic, tomatoes and cilantro. This is a slow cooked stew that is made without adding any extra water or fluids. There are various versions of this dish. Some popular versions include Espírito Santo state in the Southeast’s Moqueca Capixaba and Moqueca Baiana from Bahia state in the Northeast.

 

 

History of Moqueca Recipe

The history of moqueca can be traced back to 300 years ago, when Brazilians first invented this high protein stew. Traditionally, this soup was made by using different types of seafoods such as fish, lobster, and prawns. However, in modern times fish is the only prime ingredient of this stew.

 

 

Ingredients Used For Making Moqueca Dish

Moqueca is essentially made by using some simple and basic ingredients like fillets of firm white fish, minced cloves garlic, lime or lemon juice, salt, freshly ground black pepper, olive oil, chopped spring onion, chopped medium yellow onion, chopped green onion greens, seeded or de-stemmed or chopped yellow or red bell pepper, chopped or sliced tomatoes, Hungarian sweet paprika, pinch of red pepper flakes, chopped bunch of cilantro, and coconut milk. Some of the fish varieties that are mainly used to make this soup are halibut, cod and swordfish.  Ideally, the fish should be rinsed in cold water, pin bones removed and sliced into large pieces.

 

 

Moqueca Recipe-Preparation Suggestions  

Moqueca is basically a slow cooked dish, which is typically cooked for long hours. It is one of those soups that are prepared without adding any additional water and it takes on all the moisture from the ingredients itself. The dish is typically cooked in a large dish, something like a Dutch oven. Some olive oil is usually applies all over the pan in order to avoid sticking. Also, this dish is usually cooked in layers as fish and every other ingredient is placed in layers in a pan. All the fish pieces are arranged over the layer of vegetables and some salt, pepper are sprinkled on the top. Proper fish marinade is also an important part of this dish. Also, the fish pieces must be well quoted with garlic and salt to enhance the flavor further. Raw white rice is also cooked separately for adding in the dish later.

 

 

Serving Moqueca Dish

Moqueca can be served in various ways. However, in almost every style the dish is garnished with fresh chopped cilantro. Rice or some freshly made crusty bread are widely known as the best companions of this dish traditionally.
