|Spinach||8 Ounce (Stems Removed)|
|Green onions||8 Ounce, chopped|
|Non fat dry milk solids||1⁄4 Cup (4 tbs)|
|Water||1⁄2 Cup (8 tbs)|
|Dried tarragon||1⁄4 Teaspoon|
|Parmesan cheese||1⁄4 Cup (4 tbs), shredded|
|Tomato||1 Large, sliced|
|Low fat yogurt||1⁄2|
Place washed spinach and onions in a large frying pan over medium high heat and cook 1 minute, uncovered, until barely limp.
Turn into a blender container and add milk solids, water, eggs, salt, tarragon, and half the cheese.
Blend until finely minced.
Turn into a lightly buttered 9 inch pie pan and arrange tomato slices on top.
Sprinkle with remaining cheese and bake in a 350Â° oven for 30 minutes or until set.
Cut in wedges and serve with a spoonful of yogurt.
