Spinach Frittata

Ingredients
  Spinach 8 Ounce (Stems Removed)
  Green onions 8 Ounce, chopped
  Non fat dry milk solids 1⁄4 Cup (4 tbs)
  Water 1⁄2 Cup (8 tbs)
  Eggs 2
  Salt 1⁄2 Teaspoon
  Dried tarragon 1⁄4 Teaspoon
  Parmesan cheese 1⁄4 Cup (4 tbs), shredded
  Tomato 1 Large, sliced
  Low fat yogurt 1⁄2
Directions

Place washed spinach and onions in a large frying pan over medium high heat and cook 1 minute, uncovered, until barely limp.
Turn into a blender container and add milk solids, water, eggs, salt, tarragon, and half the cheese.
Blend until finely minced.
Turn into a lightly buttered 9 inch pie pan and arrange tomato slices on top.
Sprinkle with remaining cheese and bake in a 350° oven for 30 minutes or until set.
Cut in wedges and serve with a spoonful of yogurt.
