Guasacaca Sauce - George Duran (DishandDine Cookbook Author Series)

  Onion 1 , chopped
  Green bell pepper 1 , seeded, chopped
  Ripe avocados 2 , seeded
  Garlic 2 Clove (10 gm), peeled
  Salt 1 Tablespoon (or to taste)
  Red wine vinegar 1⁄3 Cup (5.33 tbs)
  Fresh parsley 1⁄2 Bunch (50 gm), chopped
  Fresh cilantro 1⁄2 Bunch (50 gm), chopped
  Black pepper 1⁄4 Teaspoon (or to taste)
  Olive oil 1 Cup (16 tbs)

1. In a food processor or blender put onion, bell pepper, avocados, garlic, salt, parsley, cilantro, red wine vinegar, black pepper and blend it till soft.
2. While the food processor is running slowly pour the olive oil to blend in with the ingredients.
3. Transfer it to an air tight container and put it in the refrigerator for at least 30 minutes before use.

4. Use this sauce to make recipes like meat of choice, grilling, or simply as a dip or condiment.

To make it more spicy add hot sauce, Tabasco sauce or jalapeno peppers while blending.
