Broccoli Frittata

Ingredients
  Reduced fat cheddar cheese 12 Ounce (Mild)
  All purpose flour 1⁄2 Cup (8 tbs)
  Dried minced onion 2 Tablespoon
  Baking powder 1 Teaspoon
  Lemon pepper seasoning 1 Teaspoon
  Salt To Taste
  Eggs 8
  Frozen broccoli 20 Ounce, thawed (2 packs)
  Small curd low fat cottage cheese 2 Cup (32 tbs)
  Butter 2 Tablespoon
  Fresh parsley 1⁄4 Cup (4 tbs), chopped
Directions

GETTING READY
1) Preheat the oven to 350 F

MAKING
2) Grease generously with butter the baking pan of 13 x 9x 2 inch
3) Into a large bowl, add in the cheddar, flour, onion, baking powder, seasoning salt till the cheese is evenly coated
4) Into a another bowl, crack the eggs
5) Using a whisk, beat the eggs well
6) Add in the cheese flour mixture, broccoli, cottage cheese and the melted butter
7) Onto a baking dish, pour in the mixture
8) Sprinkle in freshly chopped parsley
9) Bake for about 45minutes
10) Allow to cool onto a wire rack
11) Cut into wedges and arrange onto a tray

SERVING
12) Serve with parsley sprigs
