Frittata for Dinner
|Eggs||6 Large, beaten|
|Garlic||1 Clove (5 gm), crushed|
|Shallots||2 Large, chopped|
|Goat cheese||5 Ounce, cut into small pieces|
|Sun-dried tomatoes||1⁄4 Cup (4 tbs), chopped|
|Mixed herbs||1⁄4 Cup (4 tbs)|
|Canola oil||1 Tablespoon|
|Freshly ground pepper||To Taste|
|Kosher salt||To Taste|
Preheat oven to 385 degrees F.
On a medium heat, put a non-stick pan.
Add eggs to a large bowl.
Add salt and pepper to the eggs.
Saute shallot and garlic in the pan for a minute.
Add whisked eggs.
Drop in tomatoes, cheese and herbs.
Cook for a minute.
Put egg mixture into the oven for 6-8 minutes.
