Frittata For Dinner

So you think you don't have time to make dinner? Why not try a delicious frittata? If you like omelets, you're going to love frittatas.
Ingredients
  Eggs 6 Large, beaten
  Garlic 1 Clove (5 gm), crushed
  Shallots 2 Large, chopped
  Goat cheese 5 Ounce, cut into small pieces
  Sun-dried tomatoes 1⁄4 Cup (4 tbs), chopped
  Mixed herbs 1⁄4 Cup (4 tbs)
  Canola oil 1 Tablespoon
  Freshly ground pepper To Taste
  Kosher salt To Taste
Directions

Preheat oven to 385 degrees F.
On a medium heat, put a non-stick pan.
Add eggs to a large bowl.
Add salt and pepper to the eggs.
Saute shallot and garlic in the pan for a minute.
Add whisked eggs.
Drop in tomatoes, cheese and herbs.
Cook for a minute.
Put egg mixture into the oven for 6-8 minutes.
