Hearty O Brien Frittata

Ingredients
  Peeled diced baking potato 1 Cup (16 tbs)
  Shredded reduced fat sharp cheddar cheese 2 Ounce, divided (1/2 Cup)
  Egg whites 4 Large
  Egg yolk 1 Large
  Reduced calorie stick margarine 2 Teaspoon
  Diced red onion 1⁄2 Cup (8 tbs)
  Diced red bell pepper 1⁄2 Cup (8 tbs)
  Diced lean canadian bacon 1⁄2 Cup (8 tbs)
  Garlic 2 Clove (10 gm), minced
  Fat free sour cream 1⁄4 Cup (4 tbs)
Directions

GETTING READY
1. Preheat the oven at 450°F

MAKING
2. In a small saucepan, add potato and cover with water; bring it to a boil, cook for ten minutes till tender and then drain
3. In a bowl, mix the egg whites, yolk and quarter cup cheese and stir well to combine; set it aside
4. In a large nonstick skillet, melt margarine over medium heat, add potato, onions, bell pepper, bacon and garlic and let it all saute for five minutes
5. Add in the egg mixture and spread the bottom of the skilet evenly with it; turn the heat down a little and cook for another five minutes
6. Wrap the skillet handle in foil and place it in the oven to bake for five minutes until set
7. Sprinkle the rest of the cheese on top and bake for another minute for the cheese to melt

SERVING
8. Cut the frittata in half and top with sour cream before serving
