|All purpose flour||1 Cup (16 tbs)|
|Milk||2⁄3 Cup (10.67 tbs)|
|Cooking oil||2 Teaspoon|
|Veal kidneys/8 lamb kidneys||2 , sliced 1/4 inch thick|
|Shortening||2 Cup (32 tbs) (For Deep Frying)|
1) Combine together flour, egg, milk, cooking oil and salt to make a batter.
2) Into this batter, dip the kidney slices and deep fry in hot fat at a temperature of 370":F(on a frying thermometer) until nicely browned.
3) Drain the excess fat on paper towels.
4) Serve immediately.
