Italian Tuna Frittata
|Olive oil||2 Tablespoon|
|Green pepper||1 , chopped|
|Onion||1 , chopped|
|Tuna||1 Cup (16 tbs), flaked|
|Pepper white||1⁄8 Teaspoon|
Heat olive oil.
Saute green pepper and onion for 5 minutes.
Beat eggs; add tuna and seasonings.
Mix well and pour into skillet with vegetables.
Cook, lifting edges with spatula and tilting skillet to allow uncooked egg to run under.
Divide into 4 portions and turn each to brown.
Serve on toast spread with mayonnaise.
Makes 4 servings.
