How To Make Brigadeiro- Almond And Chocolate

DulceDelight's picture
This Brazilian treat is the favorite of everyone in Brazil. I DO NOT know anyone there who doesn't like it. It is a mixture between fudge and mousse, the texture is very soft and it tastes very intense. I've always loved it and it has always been part of my life at birthday parties, friends' reunion, rainy sundays or the consolation after a sad day. The "original" recipe is made with cocoa powder and coated in sprinkles but, I'd like to give a little update to it, for this reason I used only real chocolate. (sprinkles are not chocolate,c'mom) I made this signature sweet from my country for a blog friend that I only know from internetLand, Naomi . She is a very sweet girl that writes for The Rockstar Diaries . I sent this batch you see on the video to her house in DC and I hope she had gotten it in acceptable shape, taste and temperature =). She loves to post about the food she has eaten lately and it makes us hungry hungry.
Ingredients
Chocolate brigadeiros
  Sweetened condensed milk 198 Gram
Chocolate chips 1⁄3 Cup (5.33 tbs)
  Unsalted butter 1⁄2 Tablespoon
Ground chocolate 1⁄4 Cup (4 tbs) (60% cacao)
Almond brigadeiros
Almonds 37⁄100 Cup (5.92 tbs), peeled and ground (2 tablespoons for the mix and 1/4 cup for coating)
Directions

MAKING
1. For the chocolate Brigadeiros: In a pan, add the condensed milk, chocolate chips and butter and stir well.
2. On medium or lot heat, place the pan and stir continuously until the chocolate is melted. When the chocolate stops sticking to the bottom of the pan, take off heat.
3. Spread the mix on a plate and let it cool. Leave it at room temperature for 1 1/2- 2 hours.
4. Rub some butter in your hands so that the chocolate does not stick to your hands. Take 1/2 teaspoon of the mix and mold into tiny balls.
5. Lay out the ground chocolate on a plate and coat the chocolate balls. Once coated, plate in the mini baking cups. Repeat the process with the entire mix.
6. For the almond Brigadeiros: In a pan, add the condensed milk, butter and 2 tablespoons of the grounded peeled almonds and stir well.
7. On medium or lot heat, place the pan and stir continuously until the condensed milk stops sticking to the bottom of the pan. Then, take off the heat.
8. Spread the mix on a plate and let it cool. Leave it at room temperature for 1 1/2- 2 hours.
9. Rub some butter in your hands so that the batter does not stick to your hands. Take 1/2 teaspoon of the almond mix and mold into tiny balls.
10. Lay out the ground almonds on a plate and coat the balls. Once coated, plate in the mini baking cups. Repeat the process with the entire mix.
