|Broccoli||1 Pound, peeled, trimmed and cut into 1/2-inch slices|
|Olive oil/Vegetable oil||1⁄4 Cup (4 tbs)|
|Mushrooms||1⁄2 Pound, trimmed|
|Garlic||2 Clove (10 gm), minced|
|Ground black pepper||3⁄4 Teaspoon|
|Parmesan cheese||1⁄2 Cup (8 tbs), grated|
|Red bell pepper||1 , seeded, cored, and cut in strips|
Preheat oven to 350°.
Steam broccoli, covered, in skillet for 2 to 3 minutes in 2 tablespoons water or in the microwave oven for about 1 1/2 minutes: Drain well.
Heat oil in skillet over medium heat, add broccoli, mushrooms, and garlic.
Stir, cover, and cook 3 minutes.
In bowl combine salt, pepper, and eggs, beat lightly, and pour over broccoli.
Sprinkle with Parmesan cheese, arrange pepper strips in a spokelike fashion on top, and bake, uncovered, 15 to 20 minutes or until just set but not dry.
