Chilean Tomato And Onion Salad

  Sweet onion 1 Large, thinly sliced
  Red wine vinegar 2 Tablespoon
  Freshly ground black pepper To Taste
  Extra virgin olive oil 1⁄2 Cup (8 tbs)
  Coarsely chopped cilantro 3 Tablespoon
  Jalapeno 1⁄2 , seeded and finely chopped
  Tomatoes 48 Ounce, cored and cut into 8 wedges each (8 Medium, About 6 Ounces Each)
  Salt To Taste

1. In a medium bowl, toss the sliced sweet onion with the red wine vinegar and season with salt and black pepper. Let the onion slices marinate at room temperature for 15 minutes, tossing a few times.
2. In a small bowl, combine the olive oil, chopped cilantro and jalapeno and season with salt and black pepper. Arrange the tomatoes on a platter and season with salt and pepper. Scatter the marinated onion slices over the tomatoes, drizzle with the dressing and serve the salad.
