Green Chile And Corn Frittata
|Frozen corn kernels||1⁄2 Cup (8 tbs), thawed|
|Chopped green chiles||1 Can (10 oz)|
|Fat free milk||1⁄4 Cup (4 tbs)|
|Chopped fresh parsley||1 Tablespoon|
|Chopped fresh thyme||2 Teaspoon|
|Freshly ground pepper||1⁄4 Teaspoon|
|Hot pepper sauce||3 Dash (Or To Taste)|
|Cherry tomatoes||8 , halved|
|Scallion||1 , cut into 1-inch pieces|
1 Whisk together the eggs, corn, chiles, milk, parsley, thyme, ground pepper, and pepper sauce in a large bowl.
2 Spray a medium nonstick skillet with canola nonstick spray and set over medium heat. Add the egg mixture; top with the tomatoes, cut-side up, and the scallion. Cook covered, until the eggs are set, about 15 minutes. Cut into 4 wedges.
