Huancaina Papas

Now you can make great huancaina papas by following this recipe. It is a traditional south american dish which is usually served as a starter . Once you try preparing this huancaina papas, I am sure you will be making it again!
Ingredients
  Cottage cheese 250 Gram (1 Cup)
  Freshly squeezed lemon juice 1 Tablespoon
  Lettuce leaves 4
  Paprika 1 Teaspoon
  New potatoes 12
  Fresh mint sprigs 1
  Green onions 4 , finely diced
  Fresh parsley 15 Milliliter, chopped (1 Tablespoon)
Directions

GETTING READY
1 Wash the new potatoes, leaving the skins on.

MAKING
2 In a pan, bring the potatoes to a boil and cook for 20 minutes (or microwave, covered, in 1 tsp (5 mL) water on HIGH for 5-8 minutes.
3 Let stand and allow to cool.
4 Slice or dice the potatoes.
5 In a bowl, combine cottage cheese and lemon juice, mix well.
6 Mix with the diced potato and stir with a fork.

SERVING
7 Serve at once.
