|Fresh parsley||15 Milliliter, chopped (1 Tablespoon)|
1 Wash the new potatoes, leaving the skins on.
2 In a pan, bring the potatoes to a boil and cook for 20 minutes (or microwave, covered, in 1 tsp (5 mL) water on HIGH for 5-8 minutes.
3 Let stand and allow to cool.
4 Slice or dice the potatoes.
5 In a bowl, combine cottage cheese and lemon juice, mix well.
6 Mix with the diced potato and stir with a fork.
7 Serve at once.
