Brazilian Bean Soup
|Dried latin american black beans||2 Cup (32 tbs)|
|Hot water||8 Cup (128 tbs)|
|Tomato sauce||1 Cup (16 tbs)|
|Onion||1 Large, minced|
|Garlic||1 Clove (5 gm), minced|
|Salt pork||2 Ounce, diced|
|Dried red chili peppers||2|
|Pork||3⁄4 Pound, cubed|
|Portuguese linguesa sausage||1⁄2 Pound|
|Black pepper||1⁄4 Teaspoon|
Soak beans in water for 4 hours.
Add salt, tomato sauce, onion, garlic and salt pork.
Cover, bring to boil, lower heat and simmer 45 minutes.
Add chili peppers, pork, sausage and black pepper.
Bring back to boil, lower heat and simmer until beans are cooked but still hold their shape.
Discard chili peppers.
Adjust seasonings to taste.
Pass iced orange slices and watercress sprigs.
