Ham & Cheddar Frittata
|Ground black pepper||1⁄2 Teaspoon|
|Frozen broccoli florets||4 Ounce (Thawed)|
|Smoked ham||6 Ounce, cut into 1/2 inch cubes|
|Drained bottled roasted red bell peppers||1⁄3 Cup (5.33 tbs), cut into thin strips|
|Shredded sharp cheddar cheese||2 Ounce (1/2 Cup)|
Beat eggs, egg whites, salt and pepper in large bowl until blended.
Stir in broccoli, ham and pepper strips.
Melt butter over medium heat in 10-inch ovenproof skillet with sloping side.
Pour egg mixture into skillet; cover.
Cook 5 to 6 minutes or until eggs are set around edge.
Uncover; sprinkle cheese over frittata.
Transfer skillet to broiler; broil, 5 inches from heat source, 2 minutes or until eggs are set in center and cheese is melted.
Let stand 5 minutes; cut into wedges.
