Frittata Di Carne E Vegetali
|Olive oil||1 Tablespoon|
|Onion||1 , finely chopped|
|Courgettes||2 , trimmed, washed and sliced|
|Tomatoes||2 Large, blanched, peeled, seeded and finely chopped|
|Cooked ham||6 Ounce, finely chopped|
|Dried oregano||1⁄4 Teaspoon|
|Dried marjoram||1⁄4 Teaspoon|
|Black pepper||1⁄2 Teaspoon|
|Provolone cheese||2 Ounce, grated|
In a large omelet pan, melt the butter with the oil over moderate heat.
When the foam subsides, add the onion and fry it for 8 to 10 minutes, or until it is golden Add the courgettes [zucchini] to the pan and fry for 4 minutes, turning occasional- 284 ly.
Add the tomatoes and ham and cook the mixture for a further 4 minutes.
Meanwhile, break the eggs into a small bowl.
Add the salt, oregano, marjoram and pepper and beat to blend.
Preheat the grill [broiler] to high.
Increase the heat under the omelet pan to moderately high.
Pour the beaten eggs over the vegetables in the pan.
Allow the base to set, reduce the heat to low and continue cooking the omelet until the eggs are just about to set on top.
Sprinkle over the cheese and remove the pan from the heat.
Place it under the grill [broiler] and cook for 2 minutes, or until the cheese has melted.
Cut the omelet into quarters and serve.
