Baked Frittata

Ingredients
  Cooked chopped green beans 1 Cup (16 tbs) (Wax Beans Or Snow Peas)
  Eggs 2 , separated
  Garlic powder 1 Dash
  Minced herbs/1 teaspoon dried herbs 1 Tablespoon (Fresh, Chives, Parsley Or Rosemary)
  Chopped chives 1⁄4 Teaspoon (Fresh, For Garnish)
  Salt To Taste
  Pepper To Taste
Directions

Combine beans with beaten egg yolks.
Add seasonings and minced herbs except the chives for garnish.
Beat egg whites until stiff and fold, 1/3 at a time, into vegetable mixture.
Pour batter into a heated heavy iron skillet (be sure the handle is neither flammable nor meltable) and bake at 350° F. for 20 minutes.
Cut in wedges and serve from skillet with a sprinkling of fresh chives.
