Vegetarian Bean Soup

Vegetarian Bean soup typically refers to a soup dish which is prepared with bean as the main ingredient along with other vegetables. This soup falls into the league of high fiber and high protein meals. The beans are cheaper when purchased in dried form and they can go well with most of the vegetables. When beans are properly cooked they are pulse blended in a vertical blender until they get atleast half pureed. This helps to add a chunky and creamy texture to the soup.

The soup is prepared with lima beans, tomatoes, onions, carrots, all-purpose flour, vegetable oil, water, celery, basil, pepper and salt. All ingredients are cooked in large pans until the vegetables and beans are softened. The soup is simmered for long time until it thickens.

The choice of typical Moroccan seasonings makes it apt to be served during the chilling winter months. The soup can be easily cooked with ingredients chickpea, carrots, celery, mushrooms, chopped tomatoes, apple juice concentrate, raisins, Moroccan seasoning, salt and pepper. The soup can be flavored using like jalapeno pepper, and bell pepper.
