Orange Soup

Orange soup basically refers to a stew made by combining together orange slices or orange peel with other ingredients like broth, spices, and vegetables like spinach, lentil, carrot, tomatoes etc. A few popular types of orange soup consist of carrot and orange soup, tomato orange and fig soup, orange and lentil soup, orange ginger soup, and many more. The soup made of oranges is highly nutritious, as oranges are a good sources of calcium, iron, vitamin C, copper, magnesium, fiber, protein, and several other minerals. The addition of other ingredients like tomatoes, lentils, carrots etc to the soup, helps in augmenting the nutritional value of the dish further.

A typical recipe for orange soup suggests the use of  chicken stock, orange slices and its peel , cinnamon, orange juice, fresh parsley, cloves, and salt as its ingredients .

 

Chicken stock is boiled, to which orange peel, salt, cloves, and cinnamon are added, followed by adding orange juice after around fifteen minutes.  When cool, the soup is sieved, refrigerated, and served after garnishing with orange wedges and parsley.

  • Orange and lentil soup- onions are sautéed in butter, and then combined with orange juice, lentils, carrot, half of the chicken broth, celery, thyme, pepper, and bay leaf. The mixture is cooked at low flame for around half an hour, allowed to cool, pureed, and then mixed with the remaining half chicken broth. It is reheated and served hot.

 

  • Orange Spinach soup- this orange soup combines the nutritious values of both oranges and spinach. It is prepared by melting butter, adding spinach, onions, and grated orange peel to melted butter; and cooking the mix until soft. Thereafter, flour, milk, and chicken stock are added and the soup is seasoned with salt and black pepper before pureeing it. The soup is heated again, combined with orange juice, and garnished with orange rind before serving.  

 

  • Orange ginger and carrot soup- celery, carrots, onions, and potatoes are roughly chopped, and sautéed in a big-sized saucepan, to which water is added, and the vegetables are cooked until soft. Thereafter, orange juice, grated ginger, and zest are added; the soup is blended, more of water or orange juice is added to attain desired consistency; salt, butter, black pepper, and bouillon powder are added before serving.

 

  • Tomato orange soup – garlic and onions are sautéed in butter, and flour and tomatoes are added. Thereafter, orange juice and chicken broth are added, followed by adding salt, sugar, hot pepper sauce, and black pepper, ensuring  consistent stirring of the mixture . Half of the soup is pureed and combined with the remaining half, and some more tomatoes. The soup is heated and served hot.
