Mung Bean Soup

Mung bean soup is a delicious and nutritious soup made by using mung beans which are also known as mung dal(in Hindi, Indian National Language), green gram or golden gram . Green in color, small  in size and round in texture, these beans are used for making soup mainly in India, China, Persia, Thailand and Japan.

 

The mung bean soup is mild in flavor and thus different herbs and spices are added to enhance the taste of the dish. Thick in consistency, this soup can be relished at any time of the day.

Mung beans soup is a traditional soup prepared of China. These beans in Chinese cuisine are referred to as ludou. The Chinese mung bean soup is usually served as a dessert and is considered to be good for health.

In India, mung bean soup is also considered as powerful remedy in Ayurveda and is recommended to pacify the pitta dosha. It is known as a healthy food for aiding digestion and curing upset stomach. Traditionally, this soup was prepared without using onion and garlic.

Mung Bean Soup Recipe Overview

The ingredients which are required for preparation of mung bean soup recipe include moong beans, clarified butter or olive oil, cumin, fennel seeds, asafetida, fenugreek seeds and vegetables of choice. Other digestive spices and herbs like ginger, black mustard seeds, turmeric, sage, tarragon, black pepper, coriander, basil, rosemary, and bay leaf are also used.

 

To prepare the soup, the beans are soaked overnight prior to cooking. Once done, they are rinsed under cold running water. The preferable method of cooking beans is to pressure cook them. The oil is heated and cumin, asafetida, ginger and garlic are added to it. The soaked beans are also added in the cooker along with the seasoning and water. Once tender, the consistency is adjusted by adding water.

 

The ingredients are strained and the soup is served in a bowl with garnishing of coriander leaves.
