Chilled Spinach And Cucumber Soup

Ingredients
  Green onions 1 Bunch (100 gm), sliced
  Butter 2 Tablespoon
  Peeled diced english cucumber 4 Cup (64 tbs)
  Chicken broth 3 Cup (48 tbs)
  Frozen spinach 10 Ounce (1 Package)
  Peeled sliced potatoes 1⁄2 Cup (8 tbs)
  Salt 1 Teaspoon
  Tarragon To Taste
  Lemon juice To Taste
  Pepper To Taste
  Light cream 1 Cup (16 tbs)
Directions

Saute onion in butter.
Add all remaining ingredients except cream.
Simmer until potatoes are tender.
Whirl in blender.
Add cream and chill.
Serve with sliced cucumbers.
A summer's delight.
