Quick Vegetable Soup
Choose an assortment of basic vegetables, such as tomatoes, zucchini slices, carrot sticks, celery and onion slices, chick-peas, and kidney beans.
At home, place them in a medium-size saucepan with beef or chicken broth to cover, season with salt and pepper to taste and with dried herbs you have on hand (perhaps thyme and basil).
Simmer, partially covered, for an hour or so.
Ten minutes before serving time you might want to stir in 2 to 3 tablespoons of orzo (rice shaped pasta).
Finish cooking, taste for seasonings,
