Mock Corn Soup
|Barley||1 Cup (16 tbs)|
|Bottle gourd||500 Gram, peeled and chopped into big cubes|
|Ripe tomatoes||1 Kilogram|
|Pepper powder||To Taste (fresh)|
|Parsley sprigs/Coriander sprigs||4|
The good news is that this soup comes with its own stock.
The soft centre portion tastes exactly like the stock used in corn soup because the bottle gourd is in any case one of the main ingredients in the stock.
The barley gives the soft chewy feel of the sweet corn.
To begin with fill a large pan with 10 cups of water and place the barley in it.
Bring it to a boil and let it simmer for 10-15 minutes till| the barley is almost cooked.
Then add the bottle gourd and simmer till cooked.
Finally add the tomatoes and keep covered for 10 minutes so they become soft in the steam.
Then pick out the bottle gourd pieces and the whole tomatoes and grind to a paste in the mixer.
Add this paste back to the barley water.
Add the, seasonings and adjust taste.
Garnish with sprigs of parsley or coriander and serve hot.
