Thicken Soups with Idaho Mashed Potatoes

One of the simplest uses for leftover mashed potatoes is to thicken soups and stews. Learn how and start adding new variations to some old favorites. Video instruction by Chef Chris Koetke.
  Mashed potatoes 1 Cup (16 tbs)
  Soup base 1 Quart

1. In a large vessel, place the soup base.
2. Add in the mashed potatoes and blend an immersion blender.

3. Serve soup with croutons.
