Butter Sorrel Soup
|Sorrel||1 Bunch (100 gm)|
|Lean smoked bacon||2 Ounce, finely chopped|
|Plain all purpose flour||3 Tablespoon|
|Milk||2 1⁄4 Cup (36 tbs)|
|Sour cream||1⁄4 Cup (4 tbs) (creme fraiche)|
Remove the tough stems from the sorrel, rinse the leaves and chop coarsely.
Put the sorrel, bacon and butter into a casserole.
Cover and microwave on HIGH for 3 minutes.
Sift the flour into the casserole and stir well.
Add 2 1/4 cups (500 ml/18 fl oz) of hot water and the sugar.
Season to taste with salt and pepper.
Cover and microwave on HIGH for 3 minutes, stirring every minute with a hand whisk.
Stir in the milk, cover and microwave for a further 4 minutes on HIGH.
Pour the soup into a tureen and add the sour cream (creme fraiche).
