Split Pea Soup Jardiniere
|Dried split green peas||1 Pound|
|Cold water||2 1⁄2 Quart|
|Ham bone||1 (With Meat)|
|Ham meat||1 Pound (Attached To The Bone)|
|Onion||1 Small, studded with 2 cloves|
|Dried thyme||1⁄8 Teaspoon|
|Leeks||2 , well cleaned and thickly sliced (White Part Plus 1 Inch Green)|
|Carrots||2 , scraped and cut into large chunks|
|Celery ribs||2 , cut into large chunks|
|Parsnip||1 Large, scraped and cut into large chunks|
Pick over and rinse peas; add to water in a large soup pot.
Add ham bone with meat, clove-studded onion, salt, pepper, thyme and bay leaf.
Cover and simmer 2 hours.
Discard clove-studded onion and bay leaf.
Remove ham bone and cut off meat; set aside.
Add vegetables to soup.
Simmer 30 to 45 minutes or until vegetables are tender and peas are reduced to a thick porridge.
Cut reserved meat into chunks and add to soup to heat through.
