Apple And Lettuce Soup With Almonds
|Lettuces||2 , cut into thin strips|
|Blanched almonds||1⁄4 Cup (4 tbs)|
|Olive oil||4 Tablespoon|
|Milk||2 Cup (32 tbs)|
|Grated nutmeg||1⁄4 Teaspoon|
|Chopped parsley||2 Tablespoon|
Cut the apple into rounds and put in a casserole dish with 3 (2) tablespoons of water.
Cover and microwave on high for 7 minutes or until the apple slices are soft.
Add the lettuce strips to the casserole with 1/2 cup (125 ml/ 4 fl oz) of water.
Cover and microwave for a further 10 minutes.
Puree the almonds and olive oil in a food processor until smooth.
Puree the apple and lettuce mixture in a food processor.
Pass the puree through a strainer (sieve), if it is not smooth enough.
Return the mixture to the casserole.
Add the pureed almonds and the milk.
Season with nutmeg and add salt and pepper to taste.
Microwave for 4 minutes on high.
