Cream Of Potato Soup
Melt 1 tablespoon shortening, add 1 medium onion finely diced and cook till tender.
Add 1 tablespoon flour and brown slightly.
Meanwhile peel and dice 4 medium potatoes and add to above with 1 stalk celery diced, 1 tablespoon salt.
Add 6 cups water and boil gently till potatoes are tender.
Make a smooth thin paste of 1 tablespoon flour, 1/2 cup cream or evaporated milk.
Stir into potatoes.
Season with a little vinegar and sprinkling of black pepper.
If too thick add more water.
Put croutons on top and serve.
