Provencale Cod Soup

Provencale Cod Soup is favorite around the globe. The master combination of potatoes, onion, leek, tomato, crushed garlic cloves, garni strip orange zest, fillet, and fish, with dash of salt, pepper gives Provecale cod soup a divine taste.
Ingredients
  Diced potatoes 1 3⁄4 Pound
  Onion 1 Large, sliced
  Leek 1 , trimmed, finely chopped
  Tomato 1 Large, skinned or chopped
  Oil 3 Tablespoon
  Garlic 2 Clove (10 gm), peeled and crushed
  Hot water 1 1⁄2 Quart
  Bouquet garni 1
  Orange zest strips 2
  Saffron 1⁄4 Teaspoon
  Salt To Taste
  Pepper To Taste
  White fish fillet 1 Pound (Cod Fillets)
  Bread slices 4 (Thick Slices)
  Chopped parsley 1 Tablespoon
Directions

Put the potatoes, onion, leek and tomato in a large casserole.
Add the oil and garlic and heat onhigh for 10-12 minutes.
Add the water, bouquet garni, zest of orange, saffron and seasoning.
Chop the fish into pieces and stir into the liquid.
Heat onhigh for a further 8-10 minutes.
