Pepperoni And Vegetable Soup
|Soup pasta mix||4 Ounce (1 Recipe)|
|Water||3 Cup (48 tbs)|
|Canned vegetable juice cocktail||12 Ounce (1 Can Or 1 1/2 Cups)|
|Frozen mixed vegetables||1 Cup (16 tbs)|
|Sliced pepperoni/1/2 of a 12 ounce package fully cooked smoked sausage links, sliced, 4 liks||4 Ounce, halved|
|Shredded parmesan cheese||2 Tablespoon|
In a 2 quart saucepan combine pick a pasta soup mix, the water, vegetable juice cocktail, and frozen mixed vegetables.
Bring to boiling, then reduce heat.
Cover and simmer about 35 minutes or till the lentils are tender, stirring the mixture occasionally during cooking.
Stir the sliced pepperoni or sausage into the hot mixture.
Cover and cook the soup for 5 minutes more.
Ladle the soup into soup bowls.
Garnish each serving with shredded fresh parmesan cheese.
