Vegetable Sweet Corn Soup
|Carrots||1 Tablespoon, finely chopped|
|Capsicum||1 Tablespoon, finely chopped|
1 In a pan, add 2 cups of water and bring to a bil.
2 Reserving about 1 tbsp corn kernels, grate the remaining sweet corn.
3 In another pan, heat the butter.
4 Add in the carrots, capsicum, whole sweet corn kernels and saute for a few seconds.
5 Add in the grated kernels, 2 cups of hot water, sugar, salt and pepper and allow to simmer.
6 In a small bowl, dissolve cornflour in 1 tbsp of water.
7 Gradually stir into the corn mixture.
8 Ladle into individual soup bowls and serve hot.
