Sweet & Sour Bean Soup
|Thinly sliced bacon strip||8 , diced|
|Onion||1 Small, chopped|
|Garlic||1 Clove (5 gm)|
|Stewed tomatoes||1 Can (10 oz)|
|Red kidney beans||2 Can (20 oz)|
|Chili powder||1 Teaspoon|
|Basil leaves||1⁄4 Teaspoon|
|Red wine vinegar||2 Tablespoon|
|Sour cream||1 Cup (16 tbs)|
Discard all but 2 tablespoons of the drippings.
To drippings add onion and garlic.
Microwave, covered, on HIGH (100%) for 4 minutes, stirring after 2 minutes.
Add tomatoes and their liquid.
Reserving 1 cup of the beans, place remaining beans and their liquid in casserole.
Mash reserved beans with a fork and add to casserole along with chili powder, thyme, and basil.
Microwave, covered, on HIGH (100%) for 8 to 10 minutes (stirring after 4 minutes) or until piping hot.
Stir in vinegar and bacon.
Pass a bowl of sour cream at the table, if desired.
