Choose-A-Bean Soup Mix
|Garbanzo beans||1⁄4 Cup (4 tbs)|
|Dry navy beans/Lima beans||1⁄4 Cup (4 tbs)|
|Red kidney beans/Pinto beans||1⁄4 Cup (4 tbs)|
|Dry split peas/Whole green peas||1⁄4 Cup (4 tbs)|
|Minced onion||3 Tablespoon, dried|
|Wheat berries||2 Tablespoon|
|Pearl barley||2 Tablespoon|
|Dried celery flakes||2 Tablespoon|
|Instant beef bouillon granules||2 Teaspoon|
|Dried basil||1⁄2 Teaspoon, crushed|
In a plastic bag or airtight container combine all ingredients.
Seal tightly and store till needed.
To cook choose a bean soup mix: In a 3 quart saucepan combine 1 recipe choose a bean soup mix and 7 cups water.
Bring to boiling; reduce heat.
Cover; simmer for 2 minutes.
Remove from heat.
Cover; let stand 1 hour. (Soak soup mix in the water overnight in a covered pan.) Do not drain.
Bring beans and liquid to boiling; reduce heat.
Cover and simmer for 1 1/2 to 2 hours or till beans are tender.
Remove bay leaf.
Season to taste with salt.
Ladle the soup into soup bowls.
