Vegetable Soup is something I prepare quiet often at home. The dish is delicious and my friends and relatives have already become prey to its simplicity. You will love this Vegetable Soup recipe.
Ingredients
  Oil 2 Tablespoon
  Garlic 2 Clove (10 gm) (Crushed Or Finely Chopped)
  Onions 2 , chopped
  Leek 1 , sliced
  Streaky bacon rashers 3 , rind removed and diced
  Broccoli 1⁄2 Bunch (50 gm), sliced
  Carrot 1 , diced
  Turnip 1 , diced
  Potatoes 2 (Peeled)
  Cabbage 1⁄4 , shredded
  Zucchini 4 , sliced
  Flour 2 Tablespoon
  Hot water 6 Cup (96 tbs)
  Bouillon cube 1
  Ground black pepper To Taste
  Chopped parsley 1 Tablespoon
  Salt To Taste
Directions

Heat oil in a large saucepan, add garlic, onions, leek and bacon and cook very gently until onion is soft but not brown. Add remaining vegetables (except tomatoes) and cook, stirring occasionally, for 10 minutes. Sprinkle over the flour and cook a minute, stirring. Add hot water and cube, bring to the boil, stirring lightly, then lower the heat, add tomatoes and season with salt and pepper. Simmer until vegetables are tender — about 20 minutes. Lastly add some chopped parsley. Serve with fresh crusty bread.
