Lentil Soup (Faki)
|Dried lentils||16 Ounce (1 Package)|
|Olive oil||1⁄2 Cup (8 tbs)|
|Chopped celery||1 Cup (16 tbs)|
|Grated carrot||1⁄2 Cup (8 tbs)|
|Onion||1 , quartered|
|Tomato paste||1 Tablespoon|
|Garlic||3 Clove (15 gm), peeled|
Rinse lentils several times.
In a kettle, put lentils, water, olive oil, celery, carrot, onion, tomato paste, garlic, bay leaves, salt, and pepper.
Bring to a boil.
Reduce heat and simmer covered 2 hours.
Adjust salt and pepper.
Serve with a cruet of vinegar.
