Breadfruit Soup Guadeloupe
|Breadfruit||1 1⁄2 Pound (1 Breadfruit)|
|Bacon slices||2 , fried and crumbled|
|Coconut milk||4 Cup (64 tbs)|
|Soft butter||2 Tablespoon|
Bake breadfruit at 350Â°F 45 minutes.
Open it and remove the center; peel and dice the meat.
Put breadfruit, bacon, and coconut milk in a bowl.
Puree a little at a time in an electric blender or in a food mill, adding butter if necessary.
Serve in bouillon cups and garnish with toasted grated coconut.
Breadfruit can now be found in many supermarkets and most puerto rican markets.
